Don't complicate things. Keep your menu simple; use tried and tested recipes that have gone down well time and time again.
Time things properly. If you're cooking a number of courses, timing is everything. If you follow correct times, the chances of you getting everything on the plate, hot, at the same time, is much higher. Preparation is key. The more you can do ahead of time, the better. Don't leave your shopping until the day of the meal, chop all your herbs and prepare your sauces before your guests arrive. After all, you don't want to be stuck in the kitchen whilst they're enjoying themselves.
Serve good portions. You don't want your guests leaving hungry.
